Healthy & Romantic Meal: Parchment-Wrapped Fish

Most women will agree: there are few things sexier than a gentleman who knows his way around the kitchen. Your Russian bride will be impressed when you serve her healthy, delicious and romantic meals.

 

Parchment-Wrapped Fish

"Fish en Papillote," the other name for this dish, sounds fancy and difficult, but it’s extremely simple to make. The “en papillote” part just means it’s cooked inside paper, specifically baking parchment. Parchment is one of those secret weapons that make cooking easier. It eliminates the need to grease baking sheets, and saves you from clean-up on the days your give-a-damn is offline. Plus, it makes for an elegant presentation at the table, and makes your food look more elaborate than it really is.

 

Suggested sides: Baby greens salad and brown rice. The greens can be purchased pre-washed in bags in the produce department.

 

To drink: a light and acidic white wine is the perfect accompaniment. Pinot Blanc or Pinot Grigio are both great choices.

 

You’ll Need:

  • Baking Parchment – this can be purchased at any supermarket next to the foil and plastic wrap.
  • 2 fillets of firm white fish – ask your fishmonger what’s fresh that day. Tilapia, cod, sole or any other mild fish will work great.
  • Four tablespoons extra virgin olive oil
  • Four tablespoons chopped fresh dill 
  • Salt and pepper to taste
 

Preheat the oven to 400 degrees. For each packet, cut a largish piece of parchment, about 11 by 17 inches. Fold in half and cut into heart shapes. Unfold, and drizzle with about a tablespoon of olive oil. Lay down one filet in one half of the heart. Top that with the dill and the rest of the oil and season to taste. Fold the other half of the heart over it and fold the edges over to seal.

 

Bake in 400 degree oven. For fillets that are around ¾ of an inch thick, bake for 10 minutes. For fillets that are closer to 1 ½ inches, bake for 12 to 14 minutes.

 

This is a recipe that is open to infinite variation. For instance, substitute butter for the oil, and add some capers and white wine. Swap the white fish for snapper filet. Add some sliced celery and carrots. Or, choose different herbs and spices. Find a combination you like best to make this your signature dish. No one needs to know how easy it is.
